It is against my principles to use this much oil for a carrot cake Perhaps you can suggest an alternative with less sugar, less oil, more spices

I shared this recipe because it makes an awesome cake. Where cake is concerned, my guiding principle is that there is no such thing as a healthy cake, so don't eat too much cake. I'm sure there are many alternatives out there with less fat and less sugar - but I would have to bake and eat dozens of them before presuming to suggest which one is best to my readers, and that would violate my principle. Cake is an unhealthy indulgence - so for me, I'd rather limit the indulgence than limit the cake. To put that another way - I'd rather have this cake once a year, than a lesser cake more often (and yes, I am making the assumption, albeit from experience, that a low-fat/low sugar cake is a lesser cake). I hope that makes sense. Of course - with all that having been said, if you ever come across a recipe that you think makes an amazing carrot cake - please share and I'll give it a try.
