Great article Greg, I think a lot of people suffer from the automation paradox - when you don’t actively do things you gain time but you lose those skills. There was a famous study about pilots losing flying skills due to autopilot, as an example.
Also - as I alluded to in the article - even though we might gain time, I'm not so sure that we use that time to develop in other ways. I agree though, people do not see cutting up vegetables as time well spent, but for me, when that act is treated like one might treat "kata" in martial arts - the act is beneficial in and of itself - not only as a meditation, but as contributing to a greater project of discipline and self improvement... or maybe I just like cutting stuff who knows :)
